Morrison Healthcare Food Services, BJC's food service provider, has implemented a number of programs in conjunction with BJC Help for Your Health. With a healthier focus apparent in all BJC cafeterias and dining rooms, Morrison offers healthy and tasty menu selections every day. While some programs are in pilot phases at selected locations, all BJC cafeterias and dining rooms will feature these additions. Morrison's latest program supports ocean-friendly initiatives.
Morrison and its parent company, Compass Group (the 10th largest employer in the world), have established a policy to serve seafood that's good for the environment. Through this educational program, consumers should learn the health issues surrounding seafood choices . . . when sometimes selections are unhealthy . . . and know the origins of their seafood selections.
The Marine Stewardship Council, an independent, global, non-profit organization established to address "over-fishing"; and the Monterey Bay Aquarium's Seafood Watch offer facts and figures about seafood that comes to your table from sustainable sources. Environmental Defense also offers a library of seafood information, Eat Smart. The bottom line is fish can't reproduce to keep up with demand. Some fish, such as the slow-growing orange roughy, don't even start to reproduce until they're 20. With other fish, such as the Chilean sea bass, the fishing method is troublesome. We're discouraged to eat still other fish because of health concerns, such as excessive mercury. Many fish are commercially farmed, but even this approach doesn't avoid all the problems. The use of antibiotics and chemicals in fish farming creates other health concerns, as some fish test high for PCBs and dioxins.
Compass Group's solution to these vexing dilemmas is to develop relationships with approved distributors and establish guidelines for ordering fish. Using categories of "best," "good" and "avoid," Morrison is succeeding in using mostly "best" and some "good" seafood choices in its recipes and menus. Other goals include:
- Shift Atlantic cod to pollack, Pacific cod or another sustainable alternative
- Decrease the use of farmed salmon and shrimp by 20 percent
- Eliminate the use of all "avoid" species over the next three years
- Increase the use of "best" species
Due to Compass' size, this policy and its accompanying goals could result in a spending shift of 1 million pounds of unsustainable seafood each year. Find out:

Vegetable and Fruit Frequency Cards
BJC cafeterias offer an employee vegetable and fruit frequency punch card. Once you buy nine servings of fruits or vegetables, the 10th is free, up to a value of $1 (before employee discount). Employees can get the punch card from the food service cashier, and employees must wear their badge to use the card.
Balanced Choices
The Balanced Choices program offers healthy and great-tasting dining choices in BJC cafeterias and dining rooms Monday through Friday. Debuting at Barnes-Jewish Hospital North, Barnes-Jewish West County Hospital and Barnes-Jewish St. Peters Hospital, the Balanced Choices program uses icons to make it easy to identify healthy foods. In addition to the icons, nutrient information specific to the food item is posted. BJC dietitians say food labeling is an important step in trimming Americans' waistlines.
Jennifer Polniak, Boone Hospital Center registered dietitian, says, "When I show clients the nutritional information in the food they're eating, it does make them think twice about their choices. Making this information more widely available is an excellent idea in response to the obesity epidemic. Gaining control of one's food environment is a key factor in weight management. Providing nutrition information is one step forward in the process of giving the public this needed control."
Balanced Choices offers entrees that are:
Reduced fat, calories and cholesterol: 600 calories or less, 30% calories from fat or less, 10% calories from saturated fat or less, 90 mg cholesterol or less, 600 mg sodium or less
Contains no meat, fish, poultry, shellfish or products derived from these sources, but may contain dairy or eggs
Foods made with the entire edible part of any grain: wheat, corn, oats and rice, among others
Foods that have a potentially beneficial effect on health when consumed as part of a varied diet on a regular basis; a Superfood is featured monthly
In addition, a monthly "Nutrigram" features hot health topics, and Morrison sponsors Lunch and Learn hour-long programs on various topics related to good health and nutrition.

Morrison rolled out this nationwide offering of the exclusive Weight Watchers menu at 25 of the company's accounts. Recipes are based on current published Weight Watchers recipes. Approximately 70 recipes rotate on a two-week Monday through Friday schedule. Each menu item is identified by its point value for those following the Weight Watchers program.
